Masu-no Sushi




One of the most popular local delicacies Toyama offers. The pressed sushi is wrapped in green bamboo leaves in a round wooden chip box. Taking off the leaves, you will see beautiful pink trout meat topping white Toyama rice. The origin of this sushi dates back to 1717 when Shinpachi Yoshimura, a samurai of Toyama Domain, dedicated this sushi to the 3rd lord of the Domain, Toshiaki Maeda. It is said that this sushi was also dedicated to the Shogun Yoshimune Tokugawa and received high praise. The traditional recipe has been strictly kept for maximizing trout meat taste. Masuno Sushi has won first place in the contest of lunch boxes sold at railroad stations.
